These wonderful Alaska blueberry muffins are a delicious winner whether we enjoy them while reading the morning paper, or while fishing for kings on the Kenai River! Give them a try and you'll be hooked too.

Ingredients:

2 C All-purpose flour
1/2 tsp Salt
2 tsp Baking powder
1/4 C vegetable oil
3/4 C white sugar
1 egg
1/2 C Milk
2 C Wild or Organic Blueberries

Topping:

1/3 C all-purpose flour
1/2 C white Sugar
1/2 tsp ground cinnamon
18/4 C butter, softened

Preparation:

Preheat oven to 375 degrees.  Grease and flour a 12 muffin cup pan. 

**In our family, the more topping the better, so make a little extra if you really wanna set the hook!** In a small bowl combine the flour, cinnamon, and sugar.  Cut in the butter until the mixture resembles course crumbs.

In a small bowl combine flour, baking powder and salt.  Set aside.  In a large bowl, whisk together the oil, sugar and egg.  Stir in the flour mixture alternately with the milk, mixing just until incorporated.  Fold in the blueberries.  Pour batter into the prepared muffin pan and cover with the topping.   

Bake for 25-30 minutes, or until a toothpick inserted into the center comes our clean.  Allow to cool if you can wait!
