Grandpa Nelson certainly knew what he was doing when he created this fantastic spareribs recipe. They are so simply out of this world delicious, that you can count on licking ever finger!
Ingredients:
Ribs:
1 to 2 racks of spareribs, cut individually or paired
2 to 3 whole lemons, unpeeled, washed & thinly sliced
2 to 3 large sweet onions, thinly sliced
Sauce:
2c ketchup
2/3c Worcestershire sauce
1 1/2 tsp chili powder
1 1/2 tsp salt
2 heavy dash Tabasco hot sauce
2c water
Preparation:
For ribs: Place ribs in a shallow roasting pan or two, meaty side up. Cover with a layer of sliced lemons, then a layer of onions. Roast in a very hot oven (425 degrees) for 30 to 45 minutes, being careful not to burn the lemons or onions.
For sauce: Combine sauce ingredients in a saucepan and bring to a boil. Pour over the ribs in the roasting pans or transfer ribs to a crock pot or Dutch oven and cover with sauce. Continue baking at 350 degrees or in a slow-cooker. Baste ribs occasionally. Add water if sauce gets too thick.
